Small Town Baker Brings a Taste of Home to Bastrop

Chef and self-taught baker Wesley Dills hails from the small town of Dudley in eastern North Carolina, where he grew up surrounded by the comforting presence of food at family gatherings, church events, and community celebrations. This early connection to food shaped his understanding of its power to bring joy and comfort to others.
In 2019, Wes and his husband Adam made the move to Austin, where they began their culinary journey at farmers’ markets and special events. As their passion for food and community grew, so did their desire for a permanent location. In April 2023, they opened The Bearded Baking Company on Bastrop’s Main Street—a place that reminded them of home with its welcoming people and rich history.
Wes is eager to share his love of food and his story with everyone who visits. He embraces the concept of "a taste of home and a taste of Texas," incorporating local products like Copper Shot Distillery’s Pecan Shine and hotdogs from Shiner, Texas, into his creations. Wes sincerely hopes that every visitor feels welcomed, connects with the food, and leaves with a sense of appreciation.
